Being a law student, fresh out of undergrad, I have little money to live on.
Being completely on my own, I have to make my own meals.
Being gluten-free, I'm stuck in the constant choice of quality versus amount of money in my bank account.
Being raised in a frugal home, I only buy food on sale or with a coupon.
Being fed up with the same, cheap, gluten-free food after just 3 months of law school, I can't wait for two and ahalf years from now, when I can hopefully afford my own food.

In 2007 I was diagnosed with gluten and wheat allergies. Growing up my intestines caused me a lot of distress. I was told by my doctor for 19 years that my GI tract was just sensitive. Finally, my doctor recognized my symptoms as food allergies, and I have been living gluten-free ever since. The title On Beyond Gluten! is inspired by Dr. Seuss's On Beyond Zebra! This is my story of living past the ingredients of gluten and wheat, writing my path as I go, discovering new things and ways to eat.
